High-Protein Low-Carb Mini Tuna Melt Sliders

I’m always on the hunt for high-protein, low-carb food options and this one is AWESOME! Seriously! It’s going to be in weekly rotation from now on!

  • 6-7 oz water packed tuna
  • 1/4 cup mozzarella
  • 5 oz Shiitake mushrooms
  • 2 tbsp fresh cilantro
  • 2 tbsp dijon mustard
  • salt and pepper to taste

Mix all ingredients (besides for mushrooms) together in a large bowl. Remove stems from the mushrooms and build the sliders by evenly dividing the tuna mixture among the mushroom caps. Place on baking sheet and bake for 15 minutes at 350 degrees.

Happy Anniversary Nordstrom!!!

Anniversary Sale

Whooo-hooo!!! One of my favorite shopping days has arrived again….Nordstrom’s Anniversary Sale!! It is THE BIGGEST SALE all year long. Currently it’s open to Nordstrom Reward Members only. However everyone can start shopping July 17th. You’ll have to act fast because things sell out quick. Here’s my picks so far, but I leave room to add on later.
1. Tall Hunter Boots & Short Hunter Boots – I highlighted the tall ones last year so I wanted to include the shorter style this year. They are a sport mom essential!

2. Free People plaid shirt – stylish and comfy.

3. AG Jeans – It was hard to just pick out 1 pair of jeans but I’m going to have to give it to AG. These are my current faves.

4. BaubleBar layered Necklaces – These delicate layered necklaces will dress up even the simplest of tees.

5. Frye Harness Boots – Frye boots are my favorite and the Harness ones are the best of the best.

6. Zella Ruffle Jacket – Make sure and check out the back. It’s just too cute!

7. Rebecca Minkoff crossbody – Will go with everything.

8. Kate Spade Phone Case – Shield your phone in style.

9. Beauty Blender – If you aren’t already using, you should. Plus stock up because they need to be replaced every 6 months.

10. Supergoop! – My favorite sunscreen. Sprays on with a fine mist (not a horrible cold spray) and doesn’t smell or become sticky.

11. Jo Malone – The only kind I wear.

12. PMD – Saving the best for last. I’ve been eyeing one of these and at this price it will be mine. I love getting microdermabrasion but frankly I never think to schedule an appointment, let alone get a sitter and actually take the time out to get it done. This bad boy…at home…on my schedule = true love! Plus, Michelle Money loves it!

Clean Eating Turkey Burgers

Hello friendlies!! Sorry I’ve been such a slacker getting posts up on this page. I’m going to try to be better.

No really. I am!

I mean, at least better than I have been.

So onto this recipe…THE BOMB!! My friend Aimee originally sent it to me and then I added a little to it. I make a double batch to keep in the fridge for a quick and easy reheat. I’ll eat them plain, on a bun with blue cheese, tomato, avocado, and red onion (Yum!), or crumbled up with zucchini noodles and tomato sauce. You can even freeze half to reheat at a later date. They are so versatile and really help me stay on track with my eating plan.

  • 4 small shallots (chopped)
  • 8 oz baby bella mushrooms (chopped)
  • 2 tbsp plain greek yogurt
  • 2 sprigs of fresh rosemary
  • several fresh parsley leaves (chopped)
  • 1 tsp sea salt
  • 1 tsp worchestershire
  • 2 lb. ground turkey

Mix all ingredients together and form into patties. Heat grill to medium-high. Cook burgers 5 minutes. Turn and grill until almost cooked through, about 3-5 minutes more.

I only share recipes the whole family likes. These are a big hit in our house. I hope they are in yours as well!!

Why Refresh?

Why do the 3-Day Refresh?

~ Because you have a special event coming up.

~ Because you want to kick start a new healthier routine.

~ Because you got off track and need to get back on.

~ Because you have just 5 more pounds to lose and nothing else has worked.

The 3-Day Refresh is the easiest way to break the cycle of bad eating habits, lose several pounds, and detox your body without starving. The reason I believe in it so much, unlike other detox programs, is it contains protein to support your metabolism and nourish your body.

What exactly is the 3-Day Refresh?

For 3 days you’ll follow a program of 3 shakes a day, a fiber drink, plenty of filtered water, plus real food like fresh fruits, vegetables, and healthy fats. It is a simple, straightforward program that will help cleanse your body and improve the way you feel.

What results should I expect?

A majority of my challengers lose 5 lbs. on the 3 Day Refresh. Above are my actual pictures and I lost 5 pounds and 2 inches from my waist. The best though was that my clothes fit so much better after I was done and I lost my stomach bloat.

Below is another challenger in my group who lost 5 pounds and 2.5 inches from her waist. Great job Chrissi!!

Chrissi results

What sets the 3 Day Refresh apart from other cleanses?

1. Cost – Many juice cleanses range from $50–$70 per day, while this 3-day program is only $23 per day (even less when bought with a month’s supply of Shakeology).

2. Lasting Results – Juice cleanses and other popular short-term cleanses provide incomplete nutrition promoting muscle loss instead of fat loss and can cause a rebound due to the lack of adequate protein, low fiber, and/or high sugar levels.

3. All Natural – No icky artificial ingredients.

4. You will NOT be running to the bathroom – The only thing you could possibly experience is a little fullness in your stomach or gas from the extra fiber. This is normal and totally okay. It just means the cleanse is working and doing its thing.

How do I order?   Click here or email me! I’d love to have you join my next 3-Day Refresh challenge group! I’ll support you through the whole thing and give you all my tips and tricks to make your Refresh super successful!

Tuna Salad Lettuce Wraps

One of my favorite clean eating and quick lunches! No cooking required!

  • Bibb or Boston Lettuce for wraps
  • 1 can chunk light tuna in water
  • 1 cup of veggies – broccoli and celery
  • 1/2 cup grapes
  • 1/4 cup creamy herb dressing

Creamy herb dressing

  • 1 medium avocado
  • 1.5 cups nonfat plain Greek yogurt
  • 4 tbsp. chopped cilantro
  • 2 tbsp. lemon juice
  • 1/4 tsp. sea salt
  • 1 dash white pepper
  • 1/3 cup extra-virgin olive oil

For Dressing: Blend all ingredients until smooth. Store leftover dressing in a covered container in the refrigerator. This dressing is wonderful on salads, but also great as a dip for raw vegetables.

For Tuna Salad: Mix all ingredients together and place into lettuce wraps.

Let me know what you think!

This is my favorite shopping day of the year!! It’s Nordstrom’s best sale of the year on NEW arrivals. Yep, you read that correct. This is THE sale before they are marked up to regular prices. You have from now (if you have Early Access, regular access starts July 18) until August 3rd to get your shopping on, but don’t wait long because they usually sell out quickly on the most popular stuff. Every year I usually grab jeans for the whole family, Frye boots, and running shoes. It was hard but I narrowed it down to my top 9 above. I would love to know what your favorites are too so please leave a comment with what you like!!

Shrimp and Asparagus Alfredo

IMG_0289Loved this meal tonight. It was one of those where EVERYONE agreed we must have it again. To me, this means blog worthy ;o)

  • pound of shrimp (frozen deveined and peeled)
  • box of dried whole wheat penne pasta
  • pound of fresh asparagus spears, trimmed and cut into 1-inch pieces
  • 2 TBS butter
  • 5-6 cloves of garlic, minced
  • 5 oz. can of evaporated fat free milk
  • 2 TBS cream cheese (I used Diaya)
  • 2 TBS shredded parmesan cheese
  • 1 TBS lemon juice
  • 1 tsp lemon-pepper seasoning
  • fresh parsley

In a medium saucepan cook pasta according to package directions, adding asparagus for the last 3 minutes of cooking. Drain.

In a large skillet heat butter over medium heat until melted. Add garlic and shrimp. Cook until shrimp is pink, constantly stirring. Set shrimp aside and KEEP the butter garlic sauce.

Whisk evaporated milk into the reserved butter garlic sauce. Reduce heat to low and add cream cheese, parmesan cheese, lemon juice, and lemon-pepper seasoning. Cook and stir until cheeses are melted and mixture is heated through.

Layer shrimp onto pasta and asparagus mixture. Top with alfredo sauce and sprinkle with extra parmesan cheese and diced fresh parsley.

I hope you love it as much as we did! XOxo

Cauliflower “Fried Rice”

IMG_8089This is one of my favorite sides. It tastes so much like fried rice my kids don’t even notice the difference. Plus, it heats up really well so this is a great meal you can prepare beforehand and reheat.

  • Cauliflower head
  • frozen bag of mixed veggies (I like just carrots and peas)
  • 1 onion
  • 2 eggs or 4 egg whites
  • 1 tsp onion powder
  • 2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 2 tbsp Bragg’s Liquid Aminos
  • 2 tbsp Low Sodium soy sauce

First wash the cauliflower and then using small sections pulse into “rice” with your blender. A Vitamix is awesome for this! Next on medium heat, saute the onions until brown. Add the Cauliflower, half a bag of frozen veggies, and all the seasonings. Cook for about 6-7 minutes constantly mixing until the cauliflower is soft. Push the mixture to one side and on the other side add either 2 mixed eggs or 4 egg whites and scramble.

IMG_9469When the eggs are finished cooking mix all together. We like ours served with teriyaki chicken.
